Chia Coconut and Mango Pudding

INGREDIENTS
- 1 tablespoon chia seeds.
- 100 ml canned coconut milk.
- 1 teaspoon coconut chips.
- 1/2 mango (you can use the fruit you like the most).
- 1 lime.
- Peppermint or mint.
PREPARATION
- In a glass jar, mix the chia seeds together with the coconut milk and the shavings.
- Reserve in the refrigerator for at least 30 minutes, until the seeds are hydrated.
- In a blender glass, blend the mango with a little lime zest.
- Assemble the glass: first add the chia mixture and then the crushed mango.
- You can add some mint or peppermint leaves to give it a fresh touch.
