Pumpkin Omelette

Start your mornings with a very refreshing breakfast. In addition to being suitable for vegans, it is free of foods of animal origin.

Preparation time: 30 minutes

Rations: 1

INGREDIENTS

  • 1/2 onion.
  • Pumpkin.
  • 2 eggs.

PREPARATION

  1. In a frying pan, sauté the previously chopped onion for 5 minutes.
  2. Peel the pumpkin and chop it.
  3. Add the pumpkin. We let it cook.
  4. When it is cooked, remove from the pan and set aside.
  5. In a bowl, beat the eggs. Add the pumpkin mixture and let sit for 5 minutes.
  6. Add the mixture to a non-stick pan and let it cook.
  7. Using a plate, turn the tortilla over to cook on both sides.
