Roasted Pumpkin Stuffed with Blue Cheese

The sweet combination of pumpkin along with the strong and salty flavor of blue cheese... make an incredible mixture. In addition to being a different way of eating vegetables.

Preparation time: 55 minutes

INGREDIENTS

  • 1 medium pumpkin.
  • 60 g blue cheese.
  • onion powder.
  • Salt.

PREPARATION

  1. Cut the pumpkin in half and put it in the oven at 170掳 for approximately 45 minutes (the inside must be soft to be able to remove it later).
  2. Carefully remove the filling (with seeds included) and pour it into a deep plate. Reserve the pumpkin skin.
  3. Mix the filling with 3/4 parts of the chopped blue cheese, salt and onion powder.
  4. Insert the filling inside the reserved skin.
  5. Chop the remaining cheese and spread it over the surface of our pumpkin.
  6. Put the pumpkin back in the oven at 160掳C on the grill for 10 minutes.
